She cites a company in Asheville, North Carolina, that makes sausage from seltan, derived from wheat protein, and a start-up company that blends tomato, herbs, tamari, rice wine, vinegar and sugar to create a non-fish sushi.

Feedstuffs says Meatless Monday has a small following according to a survey by Oklahoma State University. It said 8 percent of participants said they regularly make an effort to not eat meat on a Monday. Half of the respondents said they had not heard of the campaign.
